There\u2019s no telling how many recipes there are on the internet, in TV shows, in cooking magazines. And so many little shops, mainly in the center of Athens, offer these crispy would-be meatballs from chickpeas. The Lebanese or Egyptian cook usually employed by the falafel store puts this magical touch, the mastery that can only be attained by someone who has tried and made a meal in their place of origin. For this reason, when we, the \u201cignorant\u201d, pass outside these places at the center of Athens, their smells activate our taste buds immediately. The Mediterranean Sea and the easy communication between the peoples that inhabit its shores favored \u2013 among many other things, material or immaterial \u2013 the widespread appeal of falafel. That\u2019s why we have the famous chickpea balls of Sifnos, the \u201cpitia\u201d patties in Nisyros and the \u201cpitaroudia\u201d patties of Rhodes, all of them Aegean chickpea balls with small variations.<\/p>\n<p>\u00a0<\/p>\n<p><strong>INGREDIENTS<\/strong><br \/>\n<span style=\"font-weight: 400;\">For about 25 chickpea balls (depending on their size of course\u2026)<\/span><\/p><div id=\"foodu-1173792080\" class=\"foodu-content foodu-entity-placement\" style=\"margin-left: auto;margin-right: auto;text-align: center;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-5535285804585877\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block; If you do not have a large food processor, perform the mashing process in your little multi in\u2026 installments. Empty the mixture in a bowl and put it in the refrigerator. Leave it there until you use it; you can of course fry the falafel right away, I did that and it came out just fine.
