Butter cookies are my latest obsession.
Cookie making is a special category in confectionery. There are infinite combinations, flavors, textures. Cookies that are soft, crunchy, chewy, cookies with few and simple ingredients, but also more complex, with nuts, chocolate and dried fruits.
The interesting thing about cookies is that using a simple recipe as a basis, you can add your favorite ingredients and make amazing little delicacies.
Butter cookies are the simplest and tastiest, in my opinion. With three basic ingredients, butter, flour and sugar, you can make delicious cookies. This simple recipe, which is very reminiscent of the recipe for sample dough, can help you make the most “addictive” cookies. They are quite reminiscent of English shortbread cookies, need no further comment on that, right?
The vanilla aroma and the salt enhance the taste of the cookie. Cow butter makes cookies crispy and delicious. This kind of light baking makes them as crunchy as needed and keeps the aroma and taste “alive”.
They are easy to make and are the best accompaniment for coffee or snacks at school.
- 250 gr. cow butter
- 100 gr. sugar
- 300 gr. All purpose flour
- 1 egg
- 1 tablespoon vanilla extract or 1 vanilla pod or 1 sachet of vanilla flavor
- 1 teaspoon salt
- zest of half a lemon (optional)
Keep the butter out of the fridge for half an hour, drop it in an empty bowl. Add sugar, salt, vanilla, egg and lemon zest.
Mix the ingredients with a spoon. Then slowly add the flour and knead gently. It does not take much time to knead, we just need to have a soft dough.
Cover the dough with cling film and put it in the fridge for 30-40 minutes.
We take the dough out of the fridge. It is now a bit hard and firm and very easy to shape. On a floured surface, roll the dough and make it a thick bar as uniform as possible. Wrap the dough roll in cling film, place it on a tray or cutting surface and put it in the fridge for 2 hours or in the freezer for 30 minutes.
After this time has passed, take the roll out of the fridge, and with a sharp knife cut discs half a centimeter thick.
Spread the cookies on a baking dish with greaseproof paper on it and bake in a preheated oven for 12-14 minutes with hot air.
The cookies do not need much time to bake because they will become hard. You will notice that they are ready when you see that their edges have “gilded” slightly.
Remove the cookies from the greaseproof paper carefully because they are soft, leave them to cool and store them in a glass or metal box.
